This recipe was given to me by my dietician. I have altered it slightly by adding seeds. I find these muffins are the best midday snack! They fill me up, I get in the carbohydrates I need and they are just scrumptious! Plus.....who doesn’t love a good old muffin everyday.
Health Muffins
Ingredients
- 2 eggs
- 1 cup brown sugar
- 60ml canola oil
- 1 cup oat bran
- 1½ cups cake flour
- 2 cups wheat bran
- 2ml salt
- 1 Tbs bicarb
- 1 large grated apple (peeled)
- 1 cup cranberries or raisins
- 5ml cinnamon
- 2 cups low fat milk
- 5ml vanilla essence
- ½ cup pumpkin seeds
- ½ cup flaked almonds
- ½ cup sunflower seeds
Preparation
- Beat eggs, sugar and oil in bowl
- Sift in flour, cinnamon, bicarb and salt. Don't stir until the end.
- Add oat bran, wheat bran, seeds and apple. Don't stir.
- Add milk and vanilla essence.
- Stir everything until just mixed. DON'T OVER MIX.
- Seal the bowl and put in the fridge overnight.
Bake in muffin tray (I place cupcake paper holders into the muffin tray) at 180°C for 15 to 20min. - I sometimes add 1/2 cup of chocolate chips into my muffins.
